NORTHERN PIKE FISH TACOS WITH JALAPEÑO COLESLAW

6 Servings

INGREDIENTS

2LBS NORTHERN PIKE FILLETS, SKINLESS, BONELESS
2 T  VEGETABLE OIL 

FOR SPICE RUB:
1 T   PAPRIKA
1 T   SALT
1 TSP  GARLIC POWDER
1 TSP  CAYENNE PEPPER
1 TSP  ONION POWDER
1/2 TSP WHITE PEPPER
1/2 TSP BLACK PEPPER
1/2 TSP DRIED THYME
1/2 TSP DRIED OREGANO
1/2 TSP DRIED BASIL
PINCH GROUND CINNAMON

DIRECTIONS

Combine spices and rub all over fish. in large cast iron frypan over medium high heat add vegetable oil. when just starting to smoke lay in fish filets and cook 3-5 minutes. turn and cook 3-5 minutes more until just cooked through.

For coleslaw:
4 c Napa cabbage, sliced angel hair thin
2 c red cabbage, sliced angel hair thin
1/2 c red pepper, sliced angel hair thin
2  carrots, grated 
1/2 c raisins
2/3 c sliced almonds, toasted


Coleslaw dressing:
1 mango, seeded, peeled chopped
2T lime juice
4 T avocado oil
1 T honey
2 tsp jalapeño, chopped
1/2 tsp Dijon mustard 
combine dressing ingredients in food processor until smooth and emulsified, then toss with coleslaw ingredients.

To Serve, have ready:
12 flour tortillas, stacked, wrapped in foil, baked in 350° oven for 10 minutes
2 avocados, halved, seeded, peeled, sliced
1 lime, cut in thin wedges
1 handful cilantro, roughly chopped
